Descriptions

Piedmont – This cheese is aged 60 days, and has a very sweet nutty flavor. We add an enzyme to this cheese for texture, and it has a distinct aroma to it. A cheese very similar is “Abondance”

Red Hill Cheddar – Creamy raw aged cheddar, aged a minimum of 4 months. A very labor intensive cheese, using the old correct techniques of cutting curds into slabs, and stacking them. The curds are cut by hand, salted then hooped.

Wanda – Italian cheese aged 6 months, (asiago-style cheese). Natural rind, very creamy with the addition of enzymes that create a slightly nutty flavor.

Peppered Canebrake – Slightly soft, washed curd cheese. Aged a minimum of 2 months. Raw Cow’s milk, with the addition of a selection of peppers grown right on Wright Dairy.

Truffled Wanda – Wanda, aged only 4 months, and loaded with black Italian truffles. A farm favorite!!!

Canebrake Gouda – Slightly creamy cheese with a very sharp flavor. This cheese is available in 22 lb wheels. Aged for 3 months.

Cheaha – Our version of Parmesan. This cheese is a labor of love, and still is. Our current stock is (65) wheels, and will be aged a minimum of 2 years. Yes, we are still waiting for this cheese to be ready….

More cheeses will be available soon – Including Truffled Wanda, Canebrake Gouda, Peppered Canebrake, and of course Cheaha, the parmesan. I will let you know when these are ready to go, and also give you pricing.
